Kryssy's Stir-Fry Recipe:
Ingredients:
2 chicken breasts (cut up in small bite sized pieces)
4 tbsp. olive oil
1 large head broccoli
1 small yellow bell pepper
1 small orange bell pepper
1/2 red onion
1/2 yellow squash
1/2 zucchini
5 mushrooms
1/2 cup pea pods
1/8 cup cilantro
Red pepper flakes (to taste, optional, adds spice)
1/4 tsp. ground ginger (optional)
Lemon pepper (to taste)
Sauce:
1 tbsp. corn starch
1/2 cup water
1/4 cup reduced sodium soy sauce (or teriyaki sauce or both)
Cook:
Heat 2 tbsp. olive oil in wok over medium heat, add chicken. Sprinkle with lemon pepper & red pepper. Cook chicken until no longer pink. Remove chicken from wok. Heat 2 tbsp olive oil in wok over medium-high heat. Add broccoli, pea pods & bell peppers. Cook about 5 mins. Add onions, squash & zucchini. Cook about 5 mins. Add mushrooms, cilantro, ginger & red pepper (if desired). Cook until veggies are done about 5 more mins. Meanwhile, mix all sauce ingredients in a small cup, pour sauce over veggies & cook about 1-2 minutes until sauce thickenings. Serve warm over brown rice.
